The “Shawarmarger”

Shawarger

This is a quite light and refreshing burger inspired by my Shawarma recipe.


Ingredients for a burger:

  • 180gr of minced chicken (or a butterflied chicken breast)
  • Lettuce
  • A slice of tomato
  • Onion
  • Spices:
    • Half a teaspoon cardamom
    • Half a teaspoon coriander
    • Half a teaspoon cumin
    • A dash of cinnamon
    • A dash of paprika
    • A dash of pepper
    • A dash of salt
  • A dash of olive oil
  • Tzatzíki sauce (will write a recipe soon)
  • Burger buns

  1. Mix the minced chicken with the spices and a dash of olive oil, and marinate it in the fridge for 2 hours.
  2. Form your patty and cook it in a pan on medium-high heat until golden-brown.
  3. Slices some onion and toast the buns
  4. Build the burger:
    1. Bottom bun
    2. Patty
    3. Tzatzíki sauce
    4. Onion
    5. Tomato
    6. Lettuce
    7. Top Bun

Biltong in an oven

Biltong

So after a bunch of tries I finally managed to do something pretty close to the biltong that I buy in the South African pub close to my place. It is drier that the one I used to buy but I think it is just due to the meat I used that is very lean.


Ingredients:

  • 500 gr of thin peaces of beaf (around 0.8 cm of thickness)
  • 3 tablespoons of vinegar
  • 1.5 teaspoon of salt
  • 3 teaspoons of coriander (powder or crushed grains)
  • 0.5 teaspoon of pepper
  • 0.5 teaspoon of paprika
  • 1 teaspoon of Cayenne pepper

  1. In a bowl mix the vinegar with all the spices.
  2. Dip the meat in the vinegar mix and make sure that all the meat is coated.
  3. Put the meat in a bowl, cover with plastic foil and marinate it over night in the fridge.
  4. Preheat the oven at 60°C with the “fan” mode switched on and a trail at the bottom of the oven.
  5. Hang the meat on a cooking grid and put it in the oven.
  6. Dry for at least 6 hours.
  7. When the meat is dry slice it in very thin pieces and it is done!

Spicy Pork Ribs

Ribs

I was told that ribs made in the oven are disgusting, I think I managed to prove the contrary!

For this recipe I used pork ribs with some additional meat on top of it because it have some additional fat that makes them more moist. But you can do exactly the same with normal ribs.


Ingredients:

  • Pork Ribs
  • Olive Oil
  • Paprika
  • Chilli powder
  • Cayenne pepper
  • Barbecue Sauce
  • Sweet chilli sauce
  • Pepper

  1. Generously rub the ribs with the paprika, chilli powder and cayenne pepper. Let it infuse during one or two hours at room temperature.
  2. Preheat your oven to 250°C.
  3. Rub the ribs with a little bit of olive oil.
  4. Fill a tray with water and put it on the lowest level of the oven. If all the water evaporates during the baking, add some more.
  5. Put the ribs on a rack in the middle of the oven, bone side down, and let it cook for 40 minutes or until it starts to be crispy on top.
  6. In a bowl, mix 6 table spoons of barbecue sauce, 2 table spoons of sweet chilli sauce, the spices and the pepper.
  7. Turn the ribs bone side up, and let it cook 10 more minutes.
  8. Brush the meat on both sides with the sauce and put it back in the oven, bone side down.
  9. When the sauce starts to caramelise, brush the meat side with some more sauce. Repeat it twice or three times.
  10. Take it out of the oven and let it rest 10 minutes.

Guacamole

Guacamole

 


  • 1 ripe avocado
  • Half of a red onion
  • Mustard
  • Lemon
  • Salt and pepper
  • Spices( chili powder, paprika, Cayenne pepper in my case)
  • Optionally: Mayonnaise

  1. In a bowl, put the avocado pulp and mash it up with a fork.
  2. Grate the onion and add it into the bowl.
  3. Add the juice of a quarter of a lemon, half of a tea spoon of mustard and optionally a tea spoon of mayonnaise.
  4. Mix it nicely and add the salt, pepper and the spices.
  5. Mix it again and it’s ready!

Spicy Barbecue Chicken

Hot chicken

You can do it with Chicken Wings, Legs or even diced Chicken Breast.


Ingredients for 2 persons:

  • 4 chicken legs
  • 4 tablespoons of Barbecue sauce
  • 3 tablespoons of Sweet Sour sauce
  • Some grape seed oil
  • Spices: paprika, chili, pepper…

  1. Cut the legs in 3 pieces.
  2. In a bowl, mix the Barbecue Sauce, the Sweet Sour sauce and the spices. I generally put some black pepper, paprika, chili powder and chili flakes.
  3. In another bowl, put the chicken pieces and one tea spoon of the mixed sauce. Top it with oil, mix it and let it rest for 15 minutes.
  4. Preheat the oven at 200-220°C.
  5. Put your chicken on an oven tray and cook them so it gets gold and brown on both sides.
  6. When the chicken is practically ready, dip it in the sauce and put it back in the oven with the grill turned on for 3-4 minutes.
  7. And it’s ready.

Be careful it’s hot !
