Chicken Shashlik

Hello, hello!

So today we are having a very simple recipe but that is just soooo yummy! Shashlik is the main dish that people have at barbecues in Russia — or at least in my family and in friends’ families. It is skewers of big chunks of marinated meat. There are many different way of marinating the meat — each family have there own — so I’ll present you my moms one that is extremely simple and just awesome — not biased at all!

By the way I don’t have access to a barbecue at the moment so I did it in a pan. It is still yummy but the smokiness of a wooden fire is always better 😉

Ah! And last thing, in my family we generally do it from chicken legs. You separate the drumstick and cut — or actually if I am at my house in Russia I chop it with an ax *evil laugh*  — the thigh in two. You marinate and cook it with the bone and the skin. But you can as well do it with chicken breasts — as I did today — or even with other meats like pork for example.

Ingredients for one chicken breast:

  • One chicken breast — No way!!!
  • One onion
  • 2 tablespoons of vinegar (better use apple or cider vinegar, but it works with other vinegar like rice one)
  • 1 teaspoon of salt
  • 1 teaspoon of pepper

  1. Cut the onion in four and separate the petals.
  2. Slice the chicken breast in 1.5-2cm chunks.
  3. Mix everything in a bowl, and leave it to marinate for at least 30 minutes but it is best at 2 hours of marinating
    1. If you do it on a barbecue: Alternate chicken and onion on the skewer an cook on a high heat
    2. If you cook it in a pan: Preheat some oil at medium-high to high heat, sear the chicken on at least to side then add the onions and the remaining marinade.
  4. Cook until the chicken get golden brown or even slightly burned. The onions shall at least be soft. And it ready

Bonus: If you do it in the pan and the chicken is ready before the onion, remove the chicken from the pan and use a little bit of whiskey to deglaze the pan with the onions 😉

I wanted to do something slightly different from the classic burger and I noticed that we had some Jalapeño and a little bit of Okonomyiaki sauce so created a new awesome burger.

You can also use a veggie patty instead of meat.

Ingredients for one burger

  • Burger buns
  • 1 tablespoon of mayonnaise
  • 1/8 of a Jalapeño (depending how hot you want it)
  • 1 gherkin
  • 5 cm piece of green onion
  • 150 gr of beef mince ( or beef/pork mix)
  • 1 tablespoon of Okonomyiaki sauce
  • 1 tablespoon of barbecue sauce
  • 1 lettuce leaf
  • 1 cherry tomato
  • 1/4 of a red onion
  • 1 cheddar slice

  1. Dice thinly the Jalapeño, gherkin and green onion.
  2. Mix all of it with mayonnaise. That makes your “Jalapenõnnaise”.
  3. Mix the barbecue and Okonomyiaki sauce together.
  4. Slice the onion and tomato.
  5. Form your patty, put some salt and pepper on it.
  6. Toast the buns.
  7. Cook it on high heat on both side until it gets golden brown.
  8. Put the barbecue/okonomyiaki sauce on it and caramelize it.
  9. Finally add the cheddar and cover it so it melts.
  10. Build the burger (bottom to top):
    1. Bottom bun.
    2. Lettuce.
    3. Jalapenõnnaise.
    4. Onion slices.
    5. Tomato slices.
    6. Patty.
    7. Top bun.

The Barbecue Burger


It is not really a new burger but a different version of the “Classic” one.
You really need to do it on a barbecue to express all its potential.


Ingredients for a burger:

  • Burger buns
  • 3 slices of bacon
  • 3 slices of cheddar
  • 1 tablespoon of mayonnaise
  • 1 slice of tomato
  • Some lettuce
  • 1 tablespoon of thinly diced onion
  • 150gr of minced beef
  • Barbecue sauce
  • Salt and pepper
  • Thaï seven spices
  • Chili powder
  • Chili flakes
  • Paprika
  • Cayenne pepper

  1. Mix the diced onion with the mayonnaise
  2. Mix the minced meat with some thaï seven spices, salt and pepper.
  3. Mix a tablespoon of barbecue sauce with half a teaspoon of chili powder, half a teaspoon of chili flakes, half a teaspoon of paprika and half a teaspoon of cayenne pepper.
  4. Form your patty and cook it on the barbecue.
  5. Toast your burger buns on the barbecue.
  6. Cook the bacon on the barbecue.
  7. When the patty is practically ready, put a slice of cheddar on top. Let it melt slightly and add on top the bacon and another slice of cheddar.
  8. When the cheddar is starting to melt, build the burger:
    1. Bottom bun
    2. Cheddar
    3. Barbecue sauce
    4. Patty/Cheddar/Bacon/Cheddar
    5. Onion mix
    6. Tomato slice
    7. Lettuce leaves
    8. Top Bun

Spicy Barbecue Chicken

Hot chicken

You can do it with Chicken Wings, Legs or even diced Chicken Breast.

Ingredients for 2 persons:

  • 4 chicken legs
  • 4 tablespoons of Barbecue sauce
  • 3 tablespoons of Sweet Sour sauce
  • Some grape seed oil
  • Spices: paprika, chili, pepper…

  1. Cut the legs in 3 pieces.
  2. In a bowl, mix the Barbecue Sauce, the Sweet Sour sauce and the spices. I generally put some black pepper, paprika, chili powder and chili flakes.
  3. In another bowl, put the chicken pieces and one tea spoon of the mixed sauce. Top it with oil, mix it and let it rest for 15 minutes.
  4. Preheat the oven at 200-220°C.
  5. Put your chicken on an oven tray and cook them so it gets gold and brown on both sides.
  6. When the chicken is practically ready, dip it in the sauce and put it back in the oven with the grill turned on for 3-4 minutes.
  7. And it’s ready.

Be careful it’s hot !


Poulet Barbecue Epicé

N’ayant pas de chicken wings, j’ai fait cette recette avec des cuisses de poulets, mais c’est pareil pour des chicken wings.

Ingrédients pour deux personnes:

  • 4 cuisse de poulet
  • 3 cuillères à soupe de Sauce Barbecue
  • 4 cuillères à soupe de Sauce Thai
  • 3 cuillères à soupe d’huile d’olive
  • 1 cuillères à café de vinaigre
  • Épices: paprika, chili, poivre, piment

  1. Coupez les cuisses de poulets en trois. Je coupe généralement au niveau du genou et au milieu de la partie supérieure.
  2. Dans un bol, mélangez la sauce Barbecue, la sauce Thai, une cuillère à soupe d’huile d’olive et le vinaigre, ainsi que les épices que vous aimez.
  3. Préchauffez votre four à 200-220°C.
  4. Sur une plaque du four, déposez vos morceaux de poulets, “peignez” les avec un tout petit peu de sauce ainsi qu’avec le reste de l’huile d’olive.
  5. Mettez les au four et laissez bien dorer de chaque coté.
  6. Lorsque c’est bien croustillant, “peignez” les à nouveau, mais cette fois-ci avec le toute la sauce.
  7. Remettez au four pour 4-5 minutes.
  8. C’est prêt!

Attention c’est chaud, et prévoyez des serviettes.
