What is biltong? Biltong is a South African cured and dried meat. Generally beef is used but it can be done with practically every meat.

It is pretty expensive to buy biltong outside South Africa, so I am trying to find a way to do it at home.

I tried with some lean and thin beef meat that I marinated in some Xérès vinegar – also called Sherry vinegar – with some black pepper, a lot of coriander grains, paprika and cayenne pepper. It marinated for 3 hours in the fridge.

For the drying, I used an oven that I preheated to 60°C with the “fan mode” and dried it for 5 hours.

Finally I sliced it in thin stripes.

It resulted in a pretty nice dried meat but not quite enough cured and not spicy enough. So I thing for the next try I will marinate it the same mix that I used this time but with some salt and I will do it over night. I think I should roll the meat in the spice mix before drying it.

I hope next time it will be good enough to be a recipe =)


Baked tuna pasta


Ingredient for 5-6 persons:

  • One big onion
  • One clove of garlic
  • 200 grams of canned tuna
  • Two can of tomato puree
  • 400-500 grams of pasta (torsade or penne)
  • 300 grams of Pizza cheese
  • Italian herbs mix
  • Salt and pepper

  1. Dice the onion and dice or crush the garlic.
  2. Cook in a pan on medium heat the onion and garlic until the onion start to be translucent.
  3. Add the tomato puree, some salt and pepper and some Italian herbs. You can also add some chili if you prefer it spicy.
  4. Simmer for 10 minutes.
  5. Add the tuna and reduce the heat to low or medium-low.
  6. Cook the pasta as indicated on its box.
  7. Preheat the oven to 180° C.
  8. Mix the pasta with the sauce and half of the cheese and put the mix in a baking dish.
  9. Add the remaining cheese on top and put the dish into the oven.
  10. Cook for 10 minutes or until the cheese on the top melts.

Chicken-curry sandwich


We had some roasted chicken and bread leftovers after a big family dinner so I used it for my favorite leftover sandwich.

Ingredients for a sandwich:

  • Chicken (roasted or grilled are the best for it)
  • Mayonnaise
  • 2 slices of bread
  • Lettuce
  • Tomato
  • Curry
  • Optional:
    • Mustard
    • Chili or cayenne pepper

  1. Slice the chicken in small pieces.
  2. In a bowl, mix the chicken slices, two tablespoons of mayonnaise and some curry. You can also add some mustard or chili to make it spicier.
  3. Grill the bread slices.
  4. Slice the lettuce and the tomato
  5. Build the sandwich (from bottom to top):
    1. Bread
    2. Chicken-Mayonnaise mix
    3. Tomato
    4. Lettuce
    5. Bread
