Japanese chicken curry

For stew and curries, the most important is patience.


Ingredients for 3 person:

  • 3 onions
  • 3 carrots
  • 3 potatoes
  • 350 gr of chicken breasts
  • 1 leek
  • Water
  • Japanese curry dice

  1. Cut the onions, carrots, potatoes, leek and chicken into 1 cm pieces.
  2. Heat up some oil in a pan and cook the onions and carrots until the onion starts to be translucent.
  3. Put the cooked onion in a big pot or, as I do, in a wok.
  4. Keep the remaining oil in the pan and use it to quickly cook the leek on a half lower heat.
  5. When the leek starts to be slightly brown add it in the big pot.
  6. Once again keep the oil (if needed add some more) and cook the potatoes on an even lower heat. You want the potatoes to be practically cooked but not golden brown.
  7. Add the potatoes into the big pot.
  8. Finally cook the chicken on a medium-high heat. It should be cooked and slightly golden brown.
  9. Add the chicken in the pot and add water until it practically cover the ingredients.
  10. Put the pot on maximum heat until the water start to boil. Let it boil for 3 minutes and reduce the heat to the minimum.
  11. Add the curry dice, mix and let it simmer. The longer it simmer the better it is!

Teriyaki chicken

Chicken teryiaki

It is perfect with noodles and veggies or rice.


Ingredients for two:

  • 400 gr of chicken breast
  • 150 ml of low salt soy sauce
  • 50 ml of honey
  • 50 ml of sake or mirin
  • Garlic
  • One table spoon of ginger powder or grated ginger
  • Salt, pepper

  1. If your chicken breasts are too thick, you can slice it in two or use a rolling pin to flatten it. A thickness of one centimeter is perfect.
  2. In a bowl, mix the soy sauce, honey, sake or mirin, crushed garlic and the ginger. You can warm it up to help the honey to dissolve.
  3. Put salt and pepper on the chicken.
  4. In a pan, warm up some oil. When the oil is hot, put the chicken in the pan.
  5. When the chicken is golden brown, reduce the heat by half and add the sauce.
  6. Simmer it for 2-3 minutes on each side.
  7. Take the chicken out of the pan and let the sauce thicken a little bit more.
  8. Cut the chicken in half of a centimeter slices and put some sauce on top. You can top it with some sliced spring onion.

Guacamole

  • 1 ripe avocado
  • Half of a red onion
  • Mustard
  • Lemon
  • Salt and pepper
  • Spices( chili powder, paprika, Cayenne pepper in my case)
  • Optionally: Mayonnaise

  1. In a bowl, put the avocado pulp and mash it up with a fork.
  2. Grate the onion and add it into the bowl.
  3. Add the juice of a quarter of a lemon, half of a tea spoon of mustard and optionally a tea spoon of mayonnaise.
  4. Mix it nicely and add the salt, pepper and the spices.
  5. Mix it again and it’s ready!

Sandwich vietnamien

Ça parait bizarre comme mélange mais au final c’est très bon.


Ingrédient pour un sandwich:

  • Un tiers d’une baguette normale, ou une petite baguette à sandwich.
  • Une petite carotte
  • Vinaigre de riz
  • 100 gr de bœuf
  • Miel
  • Sauce de soja
  • Sauce de poisson (Fish sauce, Nam Pla)
  • Piment
  • Citron
  • Coriandre
  • Concombre
  • Sucre

  1. Commencez par râper la carotte.
  2. Dans un bol, mettez la carotte râpée et ajouter deux cuillères à soupe de vinaigre de riz et laissez mariner.
  3. Coupez le bœuf en de fine lanières et mettez les dans un autre bol.
  4. Recouvrez les lanières de bœuf avec un mélange 50/50 de sauce de soja et de miel et laissez mariner une ou deux heures.
  5. Quand le bœuf est bien mariné, préchauffez une poêle avec un peu d’huile d’olive, empalez les lanières sur des pic de bambou (le mieux c’est de faire que les lanières soient ondulées) et mettez les dans la poêle.
  6. Pendant que ça cuit, hachez un piment rouge sans les graines, mettez le dans un autre bol et saupoudrez d’une cuillère à soupe de sucre.
  7. Ajoutez ensuite du jus d’un demi citron ainsi que deux cuillères à soupe de fish sauce.
  8. Coupez quelques tranches de concombre.
  9. Lorsque la viande est bien dorée, découpez en longueur votre baguette, ajoutez la viande (sans les pics de bambou!), la carotte râpée égouttée, la fish sauce au piment et citron, les tranches de concombre et finalement des feuilles de coriandre (ou de la coriandre séchée).

Spicy Barbecue Chicken

You can do it with Chicken Wings, Legs or even diced Chicken Breast.


Ingredients for 2 persons:

  • 4 chicken legs
  • 4 tablespoons of Barbecue sauce
  • 3 tablespoons of Sweet Sour sauce
  • Some grape seed oil
  • Spices: paprika, chili, pepper…

  1. Cut the legs in 3 pieces.
  2. In a bowl, mix the Barbecue Sauce, the Sweet Sour sauce and the spices. I generally put some black pepper, paprika, chili powder and chili flakes.
  3. In another bowl, put the chicken pieces and one tea spoon of the mixed sauce. Top it with oil, mix it and let it rest for 15 minutes.
  4. Preheat the oven at 200-220°C.
  5. Put your chicken on an oven tray and cook them so it gets gold and brown on both sides.
  6. When the chicken is practically ready, dip it in the sauce and put it back in the oven with the grill turned on for 3-4 minutes.
  7. And it’s ready.

Be careful it’s hot !

Sweet potatoes with honey and spices

Its nice with some meat and veggies.

Ingredients for 100 gr:

  • 100 gr of sweet potatoes
  • Honey
  • Cinnamon
  • Nutmeg

  1. Slice the sweet potatoes.
  2. Pre-heat the oven at 180°C.
  3. Put your slices on a hob.
  4. Add a drizzle of honey on each slice.
  5. Sprinkle some cinnamon and some nutmeg.
  6. Bake them for 20 minutes and don’t forget to turn them.

Pasta carbonara

The original recipe does not contain any cream but personally, I prefer it with cream.

Ingredients for two people:

  • 1 onion
  • 20 cl of cream
  • 100 gr of thick bacon
  • 2 eggs
  • 250-300 gr of pasta
  • Some aromatic herbs
  • Parmesan

  1. Dice the onion and cook it in some olive oil.
  2. Dice the bacon.
  3. As soon as the onions begin to be browned, reduce the heat by half and add the bacon.
  4. When the bacon is practically ready, add the cream, some pepper and some herbs (oregano, basilica …) and set the heat at the minimum. Start to cook the pasta.
  5. Separate the white from the yellow of the eggs right away the pasta are ready, and add the white into the sauce. The sauce should get thicker. Keep the yellow part of the egg.
  6. Finally, you can either place the pasta into the sauce or place the pasta on a plate and lather the sauce on top. Do it in a form of a volcano and add the yellow of the egg in the crater. Garnish with parmesan.
